Linguine with Shrimp & Garlic Cream Sauce | Food Network

  • Kosher salt and freshly ground black pepper
  • 8 oz fresh linguine
  • 12 large shrimp, peeled
  • 8 cloves garlic, unpeeled
  • 2 tbsp olive oil
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan, plus more for serving
  • 1/4 cup finely chopped fresh parsley, plus more for serving

Bring a large pot of generously salted water to a boil over high heat. Once boiling, add the pasta and cook, stirring occasionally, until just tender and al dente, 1 to 3 minutes (or according to package directions). Drain well and set aside. Meanwhile, bring 6 cups water to a boil in a large saucepan.

Using a small paring knife, remove the vein along the back of each shrimp and rinse under running water. Add the garlic to the boiling water and cook for 2 minutes. Add the shrimp to the water with the garlic and cook for 2 to 3 minutes. Drain the shrimp and garlic. Peel and finely chop the garlic.

Heat the oil in a large skillet over medium heat. Add the garlic and cook for 1 minute. Add the heavy cream and bring to a simmer. Cook, stirring occasionally, until the cream begins to thicken. Stir in the Parmesan, parsley, and shrimp. Season with salt and pepper.

Pour the sauce over the linguine in a large bowl and toss to coat. Garnish with more Parmesan and parsley.

Caramelized Pancetta and Fennel Salad | Food Network

  • 1 bulb fennel, halved and cut into 1/2-inch wedges
  • 5 slices pancetta
  • 2 cloves garlic, minced
  • 2 tbsp brown sugar
  • 1 tbsp extra-virgin olive oil
  • 1/4 tsp salt
  • 1/8 tsp freshly ground black pepper
  • 5 oz (about 6 to 7 cups) mixed salad greens

Red Wine Vinaigrette

  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1/2 tsp honey
  • 1/2 tsp salt
  • 1/8 tsp freshly ground black pepper
  • 1/4 cup extra-virgin olive oil

Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.

In a medium bowl, toss together fennel, pancetta, garlic, brown sugar, olive oil, salt, and pepper. Place the ingredients on the baking sheet in a single layer. Cook until the pancetta is crisp and the fennel is caramelized, about 20 minutes. Remove from the oven and let cool for 5 minutes.

In a large bowl, place the salad greens, crumbled pancetta, and caramelized fennel. Toss the salad with the Red Wine Vinaigrette and serve immediately.

Red Wine Vinaigrette

Mix the vinegar, lemon juice, honey, salt, and pepper in a blender. With the machine running gradually blend in the oil. Season the vinaigrette, to taste, with more salt and pepper, if desired.

Fruit & Chocolate Parfaits

  • ½ cup raspberries or strawberries
  • Caramel or chocolate sauce
  • Brownies, to crumble
  • Your favorite whipped cream topping
  • Your favorite ice cream flavor
  • Shredded coconut, sprinkles, or chopped nuts

Get two clear glasses (the fancier, the better!). Layer each glass with brownies, fruit, ice cream, and whipped cream. Repeat until you have filled the glass, ending with whipped cream on top. Top with chopped nuts, shredded coconut, or sprinkles. Enjoy!

You can also make this in a large, shareable glass container and head to the couch in one of our cabin rentals to cozy up for a movie and dessert!
